What is the History of Huozhou Pancake?

According to historical records, pancakes were introduced to China by Ban Chao during Han Dynasty from the Western Regions. The Xuhanshu record states: "Lingdi was fond of Hu Biscuits." Hu Biscuits were the earliest form of pancakes, which became popular during the Tang Dynasty. In the Zizhi Tongjian, there is a record that during the Anshi Rebellion, Emperor Xuanzong and his imperial concubine Yang Guifei fled to Xianyang Jixian Palace and had nothing to eat. Yang Guozhong, the prime minister at the time, went to the market to buy Hu Biscuits as a tribute. At that time, the most famous shop in Chang'an for making sesame cakes was called Fuxing Fang. Poet Bai Juyi wrote a poem about this event, saying "Imitating Fuxing Fang in Chang'an, the pancake is crispy and fragrant when it comes out of the oven. For envoy Yang, who is suffering from hunger, it is as if Fuxing Fang has returned to life." This describes buying the pancake in Xianyang and comparing it to the sesame cakes of Fuxing Fang in Chang'an. The method of making Hu Biscuits is similar to that of modern-day pancakes, using materials such as flour, sesame, salt, oil, lye, sugar, and other raw materials. The dough is fermented, kneaded into a dough, brushed with syrup, and then roasted in an oven. This is why Bai Juyi described it as "the pancake is crispy and fragrant."
